Paleo Recipe: Faux Fish Tacos


Ingredients
8 oz. tilapia
1/8 cup diced tomato
1/8 cup chopped yellow onion
1/8 cup sliced mango
1/8 cup drained, whole kernel corn
1 tbsp. garlic
1 tsp. cilanto
1 tsp. lime
3 leaves of Boston Butter Lettuce or Radicchio (replaces soft taco shell)

Directions
1) grill tilapia then cut into small segments
2) combine remaining ingredients in a medium bowl and mix well
3) place tilapia segments and 2 tbsp. of mango pico de gallo in one lettuce leaf

Sweet and Salty Chocolate Cranberry Bark



1 bag of dark chocolate mini pieces
1/2 cup of shelled, sea salt pistachios
1/2 cup dried cranberries

Directions
1) melt the dark chocolate minis
2) mix in the remaining ingredients
3) spread mixture evenly on wax paper
4) place in freezer for 15 minutes
5) break apart into pieces

Mediterranean Egg White Omelette

Sorry everyone for not posting another recipe sooner but I thought I'd share a great morning breakfast recipe for you to inspire you all to get your day off on the right foot.

I can't take all the credit for this one but I do have to thank Soho Cafe & Grill in Astoria, New York for making me a believer of omelettes. I never liked them growing up but ever since I started long distance training back in 2007 I became notable customer always asking them to create this version but plate sized after a 16 mile run. Don't worry, this is the appropriate serving size


Mediterranean Egg White Omelette

3 egg whites
1/2 cup spinach
1/8 cup chopped onion
1/8 cup chopped tomato
sprinkle of feta cheese
garnish with basil

* serve with a side of homemade salsa *

Low Fat Cranberry Chocolate Granola Bars


Need a healthy snack to get you through the day and have to have a chocolate fix then try these yummy cranberry and chocolate granola bars on the go!




Ingredients
1/2 cup rolled oat (quick or old fashioned)
1/2 cup whole wheat flour
1/2 cup wheat germ (toasted)
1/2 tsp cinnamon
1/2 cup honey
2/3 cup cranberries (dried sweetened)
2/3 cup chocolate chips (dark chocolate chips divided) 
 
Preparation
1)Preheat oven to 300 degrees farenheit.
2)Spray an 8" square pan with cooking oil spray or coat sides and bottom of pan with canola oil.
3)In a large bowl, combine oats, flour, wheat germ, and cinnamon.
4)Stir in honey until dry ingredients are well coated.
5)Stir in dried cranberries and 1/3 cup of the chocolate chips.
6)Pat mixture into oiled pan.
7)Top mixture with remaining 1/3 cup of chocolate chips.
8)Bake for 18 - 20 minutes or until top is golden.
9)Cool in pan, then cut into squares.

Preheat the oven to 375°F. In a bowl, mix the tuna, soup, vegetables, and seasoning. Dump it all into a 1 1/2-quart casserole dish and top with pieces of the biscuits. Bake for 40 minutes.

While completing my weekly food prep yesterday my mom decided to give me a ring on the cell ...

Mom: "Morning hun, what ya doing?
Me: "cooking chewy chocolate, cranberry bars to munch on during the week"
Mom: "oh! sounds delicious! You know, you should post some of your recipes online so that I can check in from time to time and get some ideas"


And just like that an idea was born ... she's so smart!

After completing orientations with members and clients at the gym the most common problem people run into is that they do not think they have time to either go to the gym or make healthy meals. That can no longer be an excuse. Why? Well for one thing, if you don't lead a healthy lifestyle now a disease or some other ailment will force you to join a gym later on in life AND I am supplying you will healthy recipes that take little or no time at all to prepare.

Eating healthy no longer means "eat a salad!". It's time to be creative in the kitchen and create some yummy and healthy meals. Enjoy!
